Citrus Salad with Tangy Dressing

A refreshing citrus salad featuring a tangy homemade dressing, perfect for a light meal or side dish.

Ingredients

  • 4 cups mixed greens (such as arugula, spinach, and lettuce)
  • 2 oranges, peeled and sliced
  • 1 grapefruit, peeled and sliced
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped walnuts or almonds (optional)
  • 1/2 cup olive oil
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed greens, orange slices, grapefruit slices, red onion, mint, and nuts if using.
  2. In a small bowl, whisk together the olive oil, orange juice, lemon juice, honey, Dijon mustard, salt, and pepper until well blended.
  3. Drizzle the dressing over the salad just before serving and toss gently to combine.

Notes

For a sweeter salad, add segments of mandarin oranges. For extra protein, top with grilled chicken or shrimp. Dressing can be made ahead and stored in the refrigerator for up to 3 days.
