Cinnamon Roll French Toast Casserole

A decadent breakfast casserole combining the flavors of cinnamon rolls and French toast, baked with a rich custard and topped with a sweet glaze.

  • 8 cinnamon rolls (canned, with icing reserved)
  • 6 large eggs
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Cut cinnamon rolls into quarters and spread evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until fully combined.
  4. Pour the egg mixture evenly over the cut cinnamon rolls in the baking dish, pressing down gently to soak.
  5. Cover with foil and refrigerate for at least 2 hours or overnight for best results.
  6. Remove the casserole from the refrigerator and bake covered for 30 minutes.
  7. Remove the foil and bake uncovered for an additional 15-20 minutes, until golden and set.
  8. Drizzle reserved icing from cinnamon rolls over the hot casserole before serving. Dust with powdered sugar if desired.

Notes

For extra flavor, sprinkle chopped nuts or raisins over the casserole before baking. Preparing the casserole the night before improves texture and flavor. Serve with fresh fruit or maple syrup for added sweetness.
