Cinnamon Roll Cookies

Soft, buttery cookies swirled with cinnamon sugar, inspired by classic cinnamon rolls.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons milk
  • 1 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Cream butter and granulated sugar until fluffy. Beat in egg and vanilla.
  2. Whisk flour, baking powder, and salt. Gradually mix into butter mixture until dough forms.
  3. Combine brown sugar and cinnamon in a small bowl. Roll dough into a rectangle on floured surface.
  4. Sprinkle cinnamon sugar evenly over dough. Tightly roll into a log, wrap in plastic, and chill 1 hour.
  5. Preheat oven to 350°F (175°C). Slice log into 1/2-inch rounds and place on baking sheets.
  6. Bake 10-12 minutes until edges are golden. Cool completely on wire racks.
  7. Whisk milk and powdered sugar for glaze. Drizzle over cooled cookies.

Notes

You can customize the seasonings to taste.
