- 2 cups of all-purpose flour
- 1 teaspoon of salt
- 2 teaspoon of baking powder
- ½ teaspoon of baking soda
- 1 cup of granulated sugar
- 2 eggs
- 1 cup of buttermilk
- ¼ cup of vegetable oil
- 1½ teaspoons of ground cinnamon
- 2 teaspoons of pure vanilla extract
Topping:
- 2 tbsp of granulated sugar
- 1 teaspoon of ground cinnamon
- 2 teaspoons of melted unsalted butter
Instructions
- Begin by preheating your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
- In a spacious mixing bowl, combine the all-purpose flour, salt, baking powder, and baking soda thoroughly.
- In a separate bowl, whisk together the granulated sugar and eggs until they form a creamy consistency. Add the buttermilk, vegetable oil, ground cinnamon, and vanilla extract, and mix thoroughly.
- Gradually introduce the wet mixture into the dry ingredients, stirring until they just come together. Be cautious not to overmix; a few lumps are acceptable.
- Pour the batter evenly into the prepared loaf pan.
- In a small bowl, combine the granulated sugar and ground cinnamon for the topping.
- Drizzle the melted unsalted butter over the batter in the loaf pan. Sprinkle the cinnamon-sugar mixture evenly on top, and you can even create a decorative pattern with a spatula!
- Place the pan in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center emerges clean.
- Once it's done baking, remove the cinnamon bread from the oven and allow it to cool in the pan for approximately 10 minutes. Then, transfer it to a wire rack to cool completely.
- Serve the cinnamon bread as you like, either plain or toasted with a generous slather of butter.
