Cilantro Lime Chicken Bowl

A vibrant and healthy bowl featuring marinated cilantro lime chicken served over rice with fresh vegetables and a zesty dressing.

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup corn kernels
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped cilantro

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl, mix together 1 tablespoon olive oil, 1 tablespoon lime juice, lime zest, 2 tablespoons cilantro, cumin, salt, and pepper. Add chicken and toss to coat. Let marinate for 10 minutes.
  3. Spread chicken in a single layer on a baking sheet and bake for 18-20 minutes, or until cooked through.
  4. While chicken cooks, prepare rice and chop vegetables.
  5. In a small bowl, mix Greek yogurt, 1 tablespoon lime juice, and 1 tablespoon cilantro for the dressing.
  6. Divide rice among bowls. Top with chicken, cherry tomatoes, avocado, red onion, and corn. Drizzle with dressing and serve.

Notes

For extra flavor, grill the chicken instead of baking. Add a pinch of chili powder if you like a little heat. Use quinoa instead of rice for a gluten-free option.
