For the Crust:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot water
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a mini cake pan or line with cupcake liners.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
- Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Stir in hot water until the batter is smooth. Pour batter into prepared pan, filling each cavity about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool before serving.
