Chocolate Raspberry Crumb Bars

These Chocolate Raspberry Crumb Bars feature buttery crumb layers, rich chocolate, and bursts of raspberry for a decadent and satisfying dessert.

  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, combine flour, oats, granulated sugar, brown sugar, baking soda, salt, and cinnamon. Whisk well to combine.
  3. In a large mixing bowl, combine melted butter and vanilla extract. Add dry ingredients and fold in with a spatula until incorporated. Reserve 3/4 cup of the dough for the topping.
  4. Press the remaining dough evenly across the bottom of the prepared pan. Bake for 14 to 16 minutes, until lightly golden and set. Remove and cool for 15 minutes.
  5. In a medium saucepan, combine raspberries, sugar, cornstarch, and lemon juice. Bring to a boil, pressing berries to release juices, for 3 to 4 minutes. Reduce heat and simmer for 1 to 2 minutes until thickened. Remove from heat and cool for 10 minutes.
  6. Spoon raspberry filling over the par-baked crust. Sprinkle chocolate chips over the raspberry layer. Sprinkle the reserved crumb mixture over the top.
  7. Bake for another 40 to 42 minutes, until the crumble topping is golden brown and the filling is slightly bubbly. Cool completely in the pan on a wire rack before slicing.

Notes

For best results, use fresh raspberries and allow bars to cool completely before slicing. These bars can be stored in an airtight container at room temperature for up to 3 days.
