Chocolate Mint The Perfect St. Patrick’s Day Cookie

A festive and delicious chocolate mint cookie, perfect for celebrating St. Patrick’s Day with a sweet treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup mint chocolate chips
  • Green sanding sugar for rolling (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, and peppermint extract.
  4. Gradually blend in the dry ingredients until just combined. Stir in mint chocolate chips.
  5. If using, place green sanding sugar in a small bowl. Roll tablespoon-sized portions of dough into balls, then roll in sugar to coat. Place on prepared baking sheets, spacing 2 inches apart.
  6. Bake for 10-12 minutes, or until edges are set. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
