A rich and creamy chocolate chip cheesecake with a crunchy Oreo crust, topped with smooth chocolate ganache.

For the Crust:
2 cups Oreo cookie crumbs
1/4 cup melted butter
24 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup mini chocolate chips
1 cup heavy cream
1 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
Preheat oven to 325°F (165°C). Mix Oreo crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
Fold in mini chocolate chips, then pour batter over the crust. Bake for 45-50 minutes or until center is set.
Let cheesecake cool completely. For ganache, heat heavy cream until steaming, then pour over semi-sweet chocolate chips. Stir until smooth and pour over cooled cheesecake.
