A rich and creamy chocolate chip cheesecake with a crunchy Oreo crust, topped with smooth chocolate ganache.

For the Crust:
- 2 cups Oreo cookie crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup mini chocolate chips
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix Oreo crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Fold in mini chocolate chips, then pour batter over the crust. Bake for 45-50 minutes or until center is set.
- Let cheesecake cool completely. For ganache, heat heavy cream until steaming, then pour over semi-sweet chocolate chips. Stir until smooth and pour over cooled cheesecake.
- Refrigerate for at least 4 hours before serving.
