A quick and healthy stir fry with tender chicken and fresh zucchini, perfect for a weeknight dinner.

For the Crust:

  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes
  • 1 tbsp honey
  • 1 tbsp sesame seeds

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add chicken and cook until no longer pink, about 5-6 minutes.
  3. Add garlic, ginger, and red pepper flakes, stirring for 30 seconds until fragrant.
  4. Stir in zucchini and cook for 3-4 minutes until tender-crisp.
  5. Pour in soy sauce and honey, tossing to coat evenly.
  6. Garnish with sesame seeds before serving.
