For the Crust:
2 boneless, skinless chicken breasts
1 large sweet potato, diced
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 cups fresh spinach
1/2 avocado, sliced
1/4 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1/2 tbsp olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, flipping halfway.
Season chicken breasts with remaining salt and pepper. Heat remaining olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
Assemble bowls: divide spinach between two bowls. Top with roasted sweet potatoes, sliced chicken, avocado, and feta cheese. Serve immediately.
