For the Crust:
- 3 cups cooked chicken, shredded or diced
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 stalks celery, finely chopped
- 1/4 cup red onion, finely diced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix until smooth.
- Add shredded chicken, celery, red onion, and parsley to the bowl. Gently toss to coat with the dressing.
- Season with salt and pepper to taste. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve on bread, crackers, or over a bed of greens.
