Classic Chicken Noodle Soup

A comforting and easy-to-make chicken noodle soup perfect for cold winter days.

Ingredients

  • 1 pound boneless, skinless chicken breast or thighs
  • 4 cups chicken broth
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces egg noodles

Instructions

  1. In a large pot, sauté the chopped onion, sliced carrots, and sliced celery in a little oil until tender.
  2. Add the chicken to the pot and cook until browned on all sides.
  3. Pour in the chicken broth, add garlic, thyme, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer until the chicken is cooked through.
  4. Remove the chicken from the pot and shred or chop it into bite-sized pieces.
  5. Return the chicken to the pot and add the egg noodles. Cook until the noodles are tender.
  6. Serve hot and enjoy.

Notes

For a quicker version, use pre-cooked chicken and store-bought broth. You can also add other vegetables like diced bell peppers or mushrooms for extra flavor.
