Crockpot Chicken Cordon Bleu Soup

A creamy, comforting crockpot soup inspired by the classic Chicken Cordon Bleu, featuring chicken breast, Swiss cheese, ham, and a savory cream of chicken soup base with stuffing mix and butter.

Ingredients

Scale
  • 3 pounds boneless skinless chicken breast, fresh or thawed
  • 6 ounces Stove Top Chicken Stuffing Mix (1 box)
  • 21 ounces cream of chicken soup with herbs (2 cans, 10.5 ounces each)
  • 1/2 cup butter, melted (or 8 tablespoons)
  • 1/4 cup milk
  • 4 slices Canadian bacon (ham)
  • 4 slices Swiss cheese

Instructions

  1. Place chicken breasts in the crock pot and top each with a slice of Swiss cheese, then a slice of Canadian bacon.
  2. In a medium bowl, mix the two cans of cream of chicken soup with the milk, then pour the mixture evenly over the ham.
  3. Evenly sprinkle the dry stuffing mix on top, then drizzle the melted butter over the stuffing mix.
  4. Place the lid on the crock pot and cook on HIGH for 4 hours or LOW for 8 hours, or until the chicken is fully cooked.
  5. Serve hot with your favorite vegetables or a salad.

Notes

The small amount of milk used to thin the condensed soup will not curdle during slow cooking. This recipe is a great hands-off meal perfect for busy weeknights and pairs well with fresh veggies or a light salad.
