For the Crust:
- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 tsp cumin
- 1 tsp chili powder
- 4 large flour tortillas
- 1/2 cup vegetable oil for frying
- 1/2 cup sour cream (optional for serving)
- 1/2 cup salsa (optional for serving)
Instructions
1. Prepare the Crust:
- In a bowl, mix shredded chicken, cheese, onions, bell peppers, cumin, and chili powder.
- Divide the mixture evenly among the tortillas, placing it in the center of each.
- Fold the sides of the tortillas inward, then roll tightly to form a burrito.
- Heat oil in a large skillet over medium heat.
- Fry each chimichanga until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve with sour cream and salsa if desired.
