Delightful mini cherry pies that are perfect for on-the-go snacking or dessert.


Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup unsalted butter, chilled and cubed
  • 46 tablespoons ice water
  • 1 1/2 cups cherry pie filling
  • 1 tablespoon granulated sugar
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, until dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  3. Preheat oven to 375°F (190°C). Roll out dough to 1/8-inch thickness and cut into circles using a 4-inch cutter.
  4. Place a spoonful of cherry pie filling in the center of each circle. Fold dough over filling, crimp edges with a fork, and brush with egg wash. Sprinkle with sugar.
  5. Bake for 20-25 minutes or until golden brown. Let cool before serving.
