Cheesy One Pot Beef and Potatoes

A hearty and comforting one-pot meal with tender beef, potatoes, and melted cheese.

For the Crust:

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until softened.
  3. Stir in diced potatoes, beef broth, salt, pepper, and paprika. Cover and simmer for 15-20 minutes, stirring occasionally, until potatoes are tender.
  4. Sprinkle shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes before serving.
