Cheesy Kielbasa Rice and Broccoli Skillet

A quick and easy one-pan meal combining savory kielbasa, tender rice, fresh broccoli, and melted cheddar cheese for a satisfying weeknight dinner.

  • 1/2 tablespoon olive oil
  • 1 to 2 packages kielbasa, sliced
  • 1 small onion, diced
  • 1 small green bell pepper, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 cup white rice, uncooked
  • 2 cups chicken broth
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add kielbasa slices and brown on each side. Remove kielbasa from skillet with a slotted spoon and set aside.
  2. Add diced onion and green bell pepper to the skillet and cook until onion is translucent. Add minced garlic and cook for 1 more minute. Season with salt and black pepper.
  3. Stir in the uncooked rice and cook, stirring, for about 2 minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and cook for about 15 minutes.
  5. Place broccoli florets on top of the rice without stirring, cover, and cook for an additional 5 to 7 minutes or until rice is tender.
  6. Stir the kielbasa and 1 cup of shredded cheddar cheese into the rice mixture. Then top with the remaining 1 cup of cheese. Cover and let sit for about 3 minutes or until the cheese melts.

Notes

This recipe is a convenient one-pan meal perfect for busy weeknights. You can substitute cauliflower for broccoli or use different types of cheese to suit your taste. Using a large skillet with a lid helps cook the rice evenly.
