Cheesy Ground Beef Rice Skillet

A super-simple, one-pot recipe that puts dinner on the table in 30 minutes or less. This family favorite meal is requested over and over and is perfect for weeknight dinners.

  • 1 lb. lean ground beef
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced or pressed
  • 1 (10¾ oz.) can reduced-sodium or healthy request condensed cream of broccoli soup
  • 1 (8 oz.) can no salt added tomato sauce
  • 1 tbsp. Worcestershire sauce
  • 2 cups uncooked instant brown rice
  • 2 cups reduced-sodium beef broth
  • 4 cups fresh broccoli florets
  • 1 tsp. crushed red pepper flake
  • Sea salt and freshly ground pepper, to taste
  • ½ cup shredded sharp cheddar cheese
  • 2 tbsp. cilantro, chopped

Instructions

  1. Brown the ground beef in a large, deep skillet over medium-high heat until no pink is visible, draining if needed.
  2. Add onion and garlic and sauté until onion is translucent.
  3. Add soup, tomato sauce, Worcestershire, rice, broth, broccoli, salt, pepper and crushed red pepper flake. Stir to combine.
  4. Bring to a boil then reduce heat to a simmer.
  5. Cover and cook for 10-15 minutes or until rice is tender and most of the liquid is absorbed, stirring a few times.
  6. Turn off heat and sprinkle cheese and cilantro on top; cover and let cheese melt.

Notes

Frozen broccoli can be substituted for fresh. Parsley can be substituted for cilantro. Be careful not to add too much salt as the soup and broth already contain sodium.
