Cheesy Ground Beef and Rice Casserole

An easy and comforting casserole featuring seasoned ground beef, rice, peas, broth, and melted cheddar cheese, baked to perfection.

  • 1 tablespoon olive oil
  • 1 ½ pounds ground beef
  • 1 packet Hidden Valley™ Ranch Seasoning, Dressing & Recipe Mix (or 3 tbsp shaker)
  • 2 cups cooked long grain rice
  • 1 cup fresh or frozen peas
  • 1 ½ cups chicken broth
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat the oven to 350°F. In a large skillet over medium-high heat, warm the olive oil. Add ground beef and cook, stirring, until browned, about 6–8 minutes. Drain any excess fat and return to the skillet.
  2. Reduce heat to medium and add the seasoning packet. Stir in the rice, peas, broth, and 1 cup of cheese. Let simmer for 3 minutes.
  3. Transfer the mixture to a 9×13 inch baking dish and bake for 15 minutes. Remove from oven, top with remaining cheese, and bake for an additional 10 minutes until cheese is melted. Serve hot.

Notes

This recipe can be adapted for an air fryer by reducing the temperature by 25° to 50° (not below 350°F) and halving the cooking time. Adjust as needed for doneness and prevent over-browning by lowering temperature if necessary.
