Cheesy Chicken and Rice

A comforting one-dish meal combining tender chicken, fluffy rice, and melted cheese in a creamy sauce.

  • 2 tablespoons butter
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper

Instructions

  1. Melt butter in a large skillet over medium-high heat. Add cubed chicken and cook until golden, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, sauté diced onion until softened, about 3 minutes. Add minced garlic and cook for 1 minute more.
  3. Stir in rice and cook for 2 minutes, stirring frequently to coat with butter.
  4. Pour in chicken broth and cream of chicken soup, stirring well. Add salt, pepper, paprika, and cayenne pepper.
  5. Return chicken to the skillet and bring mixture to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  6. Stir in frozen mixed vegetables and cook for 3 minutes. Remove from heat and stir in shredded cheddar cheese until melted.
  7. Let stand for 5 minutes before serving.

Notes

This dish can be made ahead and reheated gently with a splash of broth. For extra flavor, use rotisserie chicken or add diced bell peppers and mushrooms. Leftovers store well in the refrigerator for up to 3 days.
