For the Crust:

  • 12 mini bell peppers, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh chives (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mix together cream cheese, cheddar cheese, bacon, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
  3. Spoon the cheese mixture evenly into each pepper half, filling them generously.
  4. Arrange the stuffed peppers on the prepared baking sheet and bake for 15-20 minutes, or until the peppers are tender and the filling is bubbly.
  5. Garnish with chopped chives if desired and serve warm.
