Cheesecake Churro Cookies

Delicious soft cookies combining the flavors of cheesecake and churros, coated in cinnamon sugar for a perfect sweet treat.

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, mix the 1/4 cup granulated sugar with an additional 1 tablespoon cinnamon for coating.
  7. Roll dough into 1-inch balls, then roll each ball in the cinnamon sugar mixture to coat.
  8. Place the coated dough balls on the prepared baking sheets about 2 inches apart.
  9. Bake for 12-14 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature butter and cream cheese to ensure a smooth dough. Rolling the dough balls generously in cinnamon sugar gives the cookies their signature churro flavor and texture.
