Cheeseburger Soup

A comforting, creamy soup that tastes like a cheeseburger in a bowl, featuring ground beef, cheddar cheese, potatoes, and vegetables in a rich broth.

  • 6 slices bacon
  • 1 pound ground beef
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 teaspoon dry mustard powder
  • 1/2 teaspoon paprika
  • 4 cups chicken broth
  • 1 1/2 cups water
  • 3 cups peeled and diced potatoes
  • 2 1/2 cups shredded sharp cheddar cheese, divided
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook bacon in a large Dutch oven over medium heat until crisp, 4 to 6 minutes. Remove bacon and set aside, leaving fat in pot.
  2. Add ground beef, carrots, celery, onion, salt, and pepper to bacon fat. Cook until beef is browned and crumbly, 5 to 7 minutes. Add garlic and cook 1 minute.
  3. Sprinkle in flour, mustard powder, and paprika. Cook, stirring, until raw flour smell disappears, 1 to 2 minutes.
  4. Gradually stir in chicken broth and water, ensuring no lumps. Add potatoes and bring to a simmer.
  5. Cook until potatoes are tender, 10 to 12 minutes. Break up some potatoes with a masher or spoon for texture.
  6. Remove from heat and slowly stir in 2 cups of cheese. Stir in heavy cream and sour cream until combined.
  7. Serve soup topped with sour cream, green onions, crumbled bacon, remaining 1/2 cup cheese, and black pepper.

Notes

For best flavor, use sharp cheddar cheese and break up some potatoes in the soup to create a creamy texture with chunks. Garnish with bacon and green onions for added richness and color.
