For the Crust:

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In another bowl, beat sugar, oil, and eggs until smooth. Stir in grated carrots and walnuts (if using). Gradually mix in the dry ingredients.
  4. Divide batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool completely.
  5. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  6. Frost the cooled cake layers and serve.
