Carrot Cake Cookies

Description

Soft, spiced cookies packed with shredded carrots, raisins, and walnuts, topped with a creamy cream cheese frosting.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in dry ingredients until just combined. Fold in shredded carrots, raisins, and walnuts.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  6. Bake for 12-14 minutes, until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack.
  7. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy. Frost cooled cookies.

Notes

You can customize the seasonings to taste.
