For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3/4 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, mix oil, granulated sugar, brown sugar, eggs, and vanilla until smooth. Stir in carrots, walnuts, and raisins.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Spread batter evenly in prepared pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely before glazing.
