Carrot Apple Zucchini Bread

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1/2 cup grated apple

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs, oil, brown sugar, granulated sugar, and vanilla until well combined.
  4. Stir in grated carrots, zucchini, and apple until evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can customize the seasonings to taste.
