For the Crust:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp vanilla extract
24 caramel candies, unwrapped
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
Take a tablespoon of cookie dough and flatten it. Place a teaspoon of cream cheese mixture and a caramel candy in the center. Cover with another tablespoon of dough, sealing edges.
Bake for 12-14 minutes or until edges are golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
