For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel bits or chopped soft caramels

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla, mixing well.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  4. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Take a tablespoon of cookie dough, flatten it, and place a teaspoon of cream cheese mixture and a few caramel bits in the center. Cover with another tablespoon of dough, sealing edges.
  6. Bake for 12-14 minutes or until edges are golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
