Caramel Brownie Cheesecake

A decadent dessert featuring a fudgy brownie base topped with creamy vanilla cheesecake and a salted caramel sauce.

  • 1 cup (200 grams) granulated sugar
  • 1 cup (85 grams) unsweetened natural cocoa powder
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup (62 grams) all-purpose flour
  • 24 ounces (680 grams) cream cheese, softened to room temperature
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (100 grams) light brown sugar
  • 1/4 cup (59 ml) heavy cream
  • 4 large eggs, at room temperature
  • 2 teaspoons vanilla paste or vanilla extract
  • 1/2 cup homemade salted caramel sauce or store-bought

Instructions

  1. Preheat oven to 325°F (163°C). Spray a 9-inch springform pan with nonstick cooking spray.
  2. Make the brownie layer: In a large bowl, combine melted butter, granulated sugar, cocoa powder, and salt. Stir until well combined.
  3. Let the mixture cool to just warm, then stir in vanilla extract and eggs one at a time, mixing well after each addition.
  4. Add flour and stir just until combined. Spread batter evenly into the prepared pan.
  5. Bake the brownie layer for about 20-25 minutes or until set. Let cool.
  6. Make the cheesecake layer: In the bowl of an electric mixer, beat cream cheese until smooth.
  7. Add granulated sugar, brown sugar, and heavy cream; beat until well combined.
  8. Add eggs one at a time, beating just until smooth after each addition. Stir in vanilla.
  9. Pour the cheesecake mixture evenly over the cooled brownie base.
  10. Bake in preheated oven for about 55 minutes to 1 hour, until the cheesecake is set and the top is slightly dry.
  11. Cool completely, then refrigerate for several hours or overnight.
  12. Before serving, drizzle the caramel sauce evenly over the cheesecake.
