Cajun White Chicken Chili

A spicy and creamy twist on classic white chicken chili, featuring Cajun seasoning, tender chicken, beans, and corn in a rich broth.

  • 1 1/2 lb boneless skinless chicken breasts
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1 tsp Cajun seasoning
  • 1 large yellow onion, diced
  • 3 tbsp garlic, minced
  • 2 15oz cans Great Northern beans, drained and rinsed
  • 2 4oz cans hot diced green chilies
  • 1 15oz can corn
  • 1/2 cup fresh cilantro, chopped, plus more for garnish
  • 24oz chicken stock
  • 2 tbsp lime juice
  • 1/2 cup heavy whipping cream
  • 4 oz cream cheese
  • Optional toppings: jalapeños, avocado, sour cream, tortilla strips, Mexican blend shredded cheese

Instructions

  1. To the bottom of a crockpot, add the chicken breasts and top with the salt, black pepper, cumin, oregano, chili powder, cayenne pepper, onion powder, and Cajun seasoning. Top the chicken and seasonings with the diced onion, minced garlic, beans, green chilies, corn, chicken broth, and cilantro. Stir so that the chicken is evenly coated.
  2. Cover the crockpot and cook on low for 8 hours (or on high for 4 hours).
  3. Once the chicken is fully cooked through, remove and shred, then place back in the slow cooker. Add the cream cheese and heavy whipping cream and stir until thoroughly incorporated. Serve hot with preferred toppings.

Notes

For extra heat, increase the cayenne pepper or add diced jalapeños. Rotisserie chicken can be used for a quicker version. Adjust Cajun seasoning to taste for more or less spice.
