Buttery Caramel Chocolate Crackers

A decadent sweet and salty treat featuring a crispy cracker base topped with buttery caramel and melted chocolate, perfect for snacking or gift giving.

  • 40 saltine crackers or 1.5 sleeves of club crackers
  • 1 cup unsalted butter (2 sticks)
  • 1 cup packed light brown sugar
  • 1/2 teaspoon vanilla extract
  • 1.5 to 2 cups semi-sweet or bittersweet chocolate chips
  • Sea salt or kosher salt to taste

Instructions

  1. Preheat oven to 350°F. Line a 9×13 inch or 11×17 inch rimmed baking sheet with foil, then parchment paper.
  2. Arrange saltine crackers or club crackers in a single even layer on the prepared baking sheet, covering the entire surface without gaps.
  3. In a medium saucepan over medium heat, melt butter and brown sugar together, stirring occasionally until the mixture begins to boil.
  4. Once boiling, continue to whisk frequently for 2-3 minutes until the mixture thickens slightly.
  5. Remove from heat and whisk in vanilla extract.
  6. Quickly pour the hot caramel mixture over the crackers and immediately spread evenly with a spatula, as it will begin to set rapidly.
  7. Bake for 5-7 minutes, watching carefully until the caramel is bubbling evenly across the surface.
  8. Remove from oven and let cool for 1-2 minutes.
  9. Sprinkle chocolate chips evenly over the hot toffee layer.
  10. Return the baking sheet to the warm turned-off oven for 1 minute to soften the chocolate, then remove and spread chocolate evenly with a spatula.
  11. Sprinkle generously with sea salt or kosher salt.
  12. Allow to cool completely on the baking sheet, then break into pieces and store in an airtight container at room temperature or in the freezer.

Notes

Do not scrape the sides of the saucepan while melting butter and sugar to prevent grainy toffee. Work quickly when spreading the caramel as it sets fast. Watch the crackers carefully during baking to prevent the edges from burning.
