This butternut squash casserole has all the flavors of fall with apples, sweet sausage, caramelized fennel and onions, plus Gruyere cheese!

    This casserole is best served hot from the oven. For a vegetarian version, omit the sausage and add extra vegetables like mushrooms or bell peppers. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
