- 1 large butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 375°F (190°C).
- Toss butternut squash, onion, and garlic with olive oil, salt, and pepper. Roast for 20 minutes until tender.
- Transfer roasted vegetables to a baking dish. Pour heavy cream over top and sprinkle with Parmesan and nutmeg.
- Mix breadcrumbs with melted butter and spread evenly over the casserole.
- Bake for 25-30 minutes until golden and bubbly.
