No-Bake Buckeye Candy

Classic no-bake Buckeye candy made with creamy peanut butter balls dipped in rich chocolate for a smooth and sweet treat.

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups creamy peanut butter (not natural peanut butter)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips or melting wafers
  • 1 tablespoon butter or coconut oil (for chocolate coating)

Instructions

  1. In a large bowl, beat together the softened butter and peanut butter until smooth.
  2. Add the powdered sugar and vanilla extract gradually, mixing until fully combined and dough-like.
  3. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Chill the peanut butter balls in the refrigerator or freezer until firm, about 1-2 hours.
  5. Melt the chocolate chips with 1 tablespoon butter or coconut oil in a microwave or double boiler until smooth.
  6. Use a toothpick to dip each peanut butter ball halfway into the melted chocolate, leaving a small circle of peanut butter visible at the top.
  7. Place the dipped balls back on the parchment-lined sheet and refrigerate until the chocolate is set, about 30 minutes.

Notes

1. Use creamy peanut butter (not natural) for the best texture and taste. 2. To avoid melting, chill the peanut butter balls before dipping in chocolate. 3. Store in an airtight container in the refrigerator for up to 2 weeks.
