Miniature peanut butter balls partially dipped in chocolate, resembling the nut of the buckeye tree.

For the Crust:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 1/2 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening
Instructions
1. Prepare the Crust:
- In a large bowl, mix peanut butter, butter, and vanilla until smooth.
- Gradually add powdered sugar, mixing until fully incorporated and dough forms.
- Roll dough into 1-inch balls and place on parchment-lined baking sheet. Chill for 30 minutes.
- Melt chocolate chips and shortening in double boiler or microwave, stirring until smooth.
- Using toothpicks, dip each ball halfway into chocolate, leaving top exposed. Return to baking sheet.
- Chill until chocolate sets, about 15 minutes. Store in airtight container.
