Buckeye Bites

Description

Miniature peanut butter balls partially dipped in chocolate, resembling the nut of the buckeye tree.


Ingredients

For the Crust:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons shortening

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix peanut butter, butter, and vanilla until smooth.
  2. Gradually add powdered sugar, mixing until fully incorporated and dough forms.
  3. Roll dough into 1-inch balls and place on parchment-lined baking sheet. Chill for 30 minutes.
  4. Melt chocolate chips and shortening in double boiler or microwave, stirring until smooth.
  5. Using toothpicks, dip each ball halfway into chocolate, leaving top exposed. Return to baking sheet.
  6. Chill until chocolate sets, about 15 minutes. Store in airtight container.

Notes

You can customize the seasonings to taste.
