Hot Fudge Sundae Brownie Cheesecake

A decadent three-layer dessert combining a brownie base, creamy cheesecake filling, rich chocolate ganache, and whipped cream topping with chopped peanuts.

Ingredients

  • 1 box walnut brownie mix with eggs, oil, and water as directed
  • 24 ounces cream cheese (3 8-oz packages), softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy whipping cream
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped peanuts

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Spray a springform pan with cooking spray and set aside
  3. Follow the directions on the brownie mix box and bake into the oven for 30-40 minutes until done
  4. Set the baked brownie aside to cool completely
  5. In a standing mixer, combine softened cream cheese and sugar until light and fluffy
  6. Add 1 egg at a time, mixing until fully combined before adding the next egg
  7. Mix in 1 teaspoon vanilla extract
  8. Pour cheesecake mixture over the cooled brownie layer and bake for 1 hour until almost set in the middle
  9. Place onto a wire rack to cool to room temperature
  10. Once cooled, place into the refrigerator overnight
  11. Combine chocolate chips and 1/4 cup heavy whipping cream in the microwave for 45 seconds
  12. Whisk the ganache until smooth and pour over the cooled cheesecake
  13. Place back into the refrigerator for one hour
  14. In a standing mixer, combine 1 cup heavy whipping cream, 1/2 cup powdered sugar, and 1 teaspoon vanilla on medium speed until stiff peaks form
  15. Scoop whipped cream into a piping bag with a star tip and pipe around the edge of the cheesecake
  16. Sprinkle chopped peanuts onto the whipped cream topping and serve

Notes

Allow cream cheese to soften to room temperature before mixing for a smooth cheesecake filling. This dessert is best served cold and can be made a day ahead. For easier slicing, use a hot knife wiped clean between cuts.
