Brown Sugar Glazed Carrots

A super quick and easy recipe for roasted carrots glazed with brown sugar, butter, garlic, and olive oil, resulting in soft, caramelized edges and a deliciously sweet glaze.

  • 1 kg / 2 lb carrots, peeled
  • 1/4 cup (40g) brown sugar, loosely packed
  • 2 garlic cloves, minced
  • 2 tbsp butter (30g), melted (or olive oil)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Parsley, for garnish (optional)

Instructions

  1. Preheat oven to 220C/425F (standard) or 200C/400F (fan).
  2. Cut carrots on the diagonal into 4cm / 1.75” lengths. Halve thicker ends so they are roughly the same width.
  3. Toss carrots in a bowl with brown sugar, melted butter, minced garlic, olive oil, salt, and black pepper.
  4. Spread the carrots out on a baking tray.
  5. Roast for 15 minutes, then toss carrots and roast for a further 10 minutes until soft and caramelized on the edges with plenty of glaze left on the tray.
  6. Toss carrots in the glaze, sprinkle with parsley if using, and serve warm.

Notes

Roasting brings out the best in carrots and creates caramelized edges that enhance the flavor. Use fresh garlic for the best taste and adjust sugar to your preference for sweetness.
