  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 3 large eggs, room temperature
  • 1 1/3 cup water or milk, room temperature
  • 2 tablespoons vegetable oil
  • 1 cup sour cream (one 250g carton), room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven according to the cake mix box instructions and prepare cake pans as directed.
  2. In a large bowl, combine the boxed cake mix, all-purpose flour, granulated sugar, and salt.
  3. Add the eggs, water or milk, vegetable oil, sour cream, and vanilla extract to the dry ingredients.
  4. Mix all ingredients together until fully combined and smooth, but do not over-mix.
  5. Pour the batter into the prepared pans, spreading evenly.
  6. Bake for the time specified on the box (approximately 50 minutes), or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pans for 10 minutes, then transfer to wire racks to cool completely before frosting.

Notes

Using full-fat sour cream adds moisture and richness to the cake, making it taste homemade. Ensure all wet ingredients are at room temperature to achieve the best texture. Avoid over-mixing to keep the cake tender.
