For the Crust:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup dried blueberries
- 1/2 cup shelled pistachios, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together oats, flour, baking soda, and salt.
- In another bowl, cream butter and sugars until fluffy. Beat in egg and vanilla.
- Gradually mix dry ingredients into wet ingredients until combined.
- Fold in blueberries and pistachios.
- Drop tablespoon-sized dough portions onto baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are golden. Cool on wire rack.
