Blueberry Croissant French Toast Bake

A decadent and easy breakfast casserole made with buttery croissants, fresh blueberries, and a rich custard base, baked to golden perfection.

For the Crust:

  • 6 large croissants, torn into pieces
  • 1 cup fresh blueberries
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, melted
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Arrange torn croissant pieces evenly in the prepared dish. Scatter blueberries over the croissants.
  3. In a medium bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt until well combined.
  4. Pour the custard mixture evenly over the croissants and blueberries. Press down gently to ensure all pieces are soaked.
  5. Drizzle melted butter over the top. Let stand for 10 minutes to allow custard to absorb.
  6. Bake for 30-35 minutes, or until the top is golden brown and the center is set.
  7. Remove from oven and let cool for 5 minutes. Dust with powdered sugar before serving.

Notes

You can customize the seasonings to taste.
