For the Crust:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 1/4 cup brown sugar
- 1/4 cup flour
- 1 tsp cinnamon
- 2 tbsp cold butter
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a 9-inch square baking pan.
- In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, and salt.
- Cut in softened butter until mixture resembles coarse crumbs. Stir in egg, milk, and vanilla until just combined.
- Gently fold in blueberries, then spread batter into prepared pan.
- In a small bowl, mix brown sugar, 1/4 cup flour, and cinnamon. Cut in cold butter until crumbly. Sprinkle over batter.
- Bake for 30-35 minutes or until golden and a toothpick comes out clean. Cool slightly before serving.
