For the Crust:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1/4 cup cold unsalted butter, cubed
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9-inch square baking pan.
- In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, and salt.
- Add softened butter, milk, egg, and vanilla. Mix until just combined.
- Gently fold in blueberries. Spread batter into prepared pan.
- In a small bowl, combine brown sugar, 1/3 cup flour, cinnamon, and cold butter. Use a fork or fingers to mix until crumbly.
- Sprinkle crumb topping evenly over the batter.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool slightly before serving.
