Blueberry Coffee Cake

Description

A moist and tender coffee cake studded with juicy blueberries and topped with a sweet crumb topping.

For the Crust:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup cold unsalted butter, cubed
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9-inch square baking pan.
  2. In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, and salt.
  3. Add softened butter, milk, egg, and vanilla. Mix until just combined.
  4. Gently fold in blueberries. Spread batter into prepared pan.
  5. In a small bowl, combine brown sugar, 1/3 cup flour, cinnamon, and cold butter. Use a fork or fingers to mix until crumbly.
  6. Sprinkle crumb topping evenly over the batter.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool slightly before serving.

Notes

You can customize the seasonings to taste.
