For the Crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup cherry pie filling
  • 1/2 cup chocolate chips, melted
  • Whipped cream for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix chocolate cookie crumbs with melted butter and press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and sour cream.
  4. Pour half of the cheesecake batter over the crust. Spoon cherry pie filling evenly over the batter, then top with remaining batter.
  5. Bake for 50-60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
  6. Drizzle with melted chocolate and garnish with whipped cream before serving.

Notes
