Better Than Anything Toffee

A simple and delicious toffee recipe made with butter, sugar, pecans, and chocolate, resulting in a rich, crunchy treat.

  • 1 cup coarsely chopped pecans
  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips

Instructions

  1. Preheat oven to 350°F. Spread chopped pecans evenly on a baking sheet and toast in the oven for about 5-7 minutes until fragrant. Set aside.
  2. In a heavy saucepan, melt the butter over medium heat.
  3. Add granulated sugar and kosher salt to the melted butter and stir constantly.
  4. Bring the mixture to a boil, stirring continuously, and cook until the temperature reaches 290°F to 300°F (hard crack stage) on a candy thermometer.
  5. Remove from heat and stir in vanilla extract and toasted pecans.
  6. Pour the hot toffee mixture onto a parchment-lined baking sheet and spread evenly.
  7. Sprinkle milk chocolate chips evenly over the hot toffee and let sit for a few minutes until melted.
  8. Spread the melted chocolate evenly over the toffee using a spatula.
  9. Place the toffee in the refrigerator and let cool completely for at least 2 hours.
  10. Once cooled, lift the parchment paper and break the toffee into smaller pieces.
  11. Store the toffee in an airtight container in a cool place.

Notes

Use a quality candy thermometer to ensure the toffee reaches the hard crack stage for the perfect texture. High-quality butter and chocolate will enhance the flavor. Cooling the toffee completely in the refrigerator helps the chocolate set properly.
