Pumpkin Bars with Cream Cheese Frosting

  • 4 large eggs
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 1 (15-ounce) can pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • For the frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat eggs, sugar, oil, and pumpkin puree with an electric mixer on low speed until light and fluffy, about 1 minute.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, and pumpkin pie spice.
  4. Gradually add dry ingredients to the pumpkin mixture, stirring until well combined.
  5. Pour batter into an ungreased 15x10x1-inch baking pan.
  6. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely in the pan on a wire rack.
  8. For the frosting, beat cream cheese and butter until smooth.
  9. Add vanilla extract and gradually beat in powdered sugar until frosting is creamy and spreadable.
  10. Spread frosting evenly over cooled pumpkin bars.
  11. Cut into bars and serve.

Notes

For best results, ensure the bars are completely cooled before frosting to prevent melting. You can add chopped nuts or raisins to the batter for extra texture and flavor.
