For the Crust:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Gradually mix dry ingredients into wet ingredients. Fold in grated carrots and walnuts.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Spread frosting over cooled bars. Cut into squares and serve.
