Beef Lombardi Casserole

A hearty and comforting casserole with layers of ground beef, noodles, and cheese.

For the Crust:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 8 oz wide egg noodles, cooked
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with onion, bell pepper, and garlic over medium heat. Drain excess fat.
  3. Stir in diced tomatoes, tomato sauce, salt, pepper, and oregano. Simmer for 10 minutes.
  4. In a greased 9×13-inch baking dish, layer half of the cooked noodles, followed by half of the beef mixture, half of the sour cream, and half of the cheese. Repeat layers.
  5. Bake uncovered for 25-30 minutes, or until bubbly and cheese is melted.

Notes

You can customize the seasonings to taste.
