For the Crust:
2 boneless, skinless chicken breasts
1/2 cup BBQ sauce
2 medium sweet potatoes, diced
1 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp garlic powder
Salt and pepper to taste
2 cups cooked quinoa or rice
1 avocado, sliced
1/4 cup red onion, thinly sliced
Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes until tender.
Season chicken breasts with salt and pepper. Grill or pan-sear until fully cooked, about 6-7 minutes per side. Brush with BBQ sauce during the last few minutes of cooking.
Slice the cooked chicken into strips. Assemble bowls with quinoa or rice, roasted sweet potatoes, BBQ chicken, avocado slices, red onion, and fresh cilantro.
Drizzle with extra BBQ sauce if desired and serve warm.
